Pancakes and Berry Lemon Compote



Breakfast for dinner?

Pancakes are one of my fave breakfast meals. Shit…their good any time of day really. Actually breakfast is my favorite out of all the meals...including linner. And since it’s the most important meal of the day, I’ve opted to eat it at all times of day. I recently came across this pancake mix that’s pretty legit. If you’re not feeling hardcore enough to make your own mix, then this is a solid pancake mix that you can feel good about using. The brand is Wheat Montana and it’s their whole grain pancake mix. I recently combined the pancakes with a mixed berry and lemon compote recipe I found online and holy Mary mother of baby J in a leisure suit it was delicious! I almost wrote home about it, but then I remembered no one writes letters anymore. Seriously, why don’t we write letters anymore? It would be so great to get a letter from a friend in the mail instead of a crappy bill. By now my tangent has probably made you hungry so get to it you crazy nut! Treat yo self to some awesomely fantastic pancakes! They’re good any time of day remember?!

  • Wheat Montana Whole Grain Pancake Mix
  • Follow instructions on bag per your serving

Mixed Berry and Lemon Compote – About 4 servings

Ingredients:
  • 1 12 oz bag of frozen organic mixed berries
  • 2 tbsp of brown sugar, plus more if desired
  • 1 medium lemon, zested and juiced
  • 1/4 cup of water
  • Pinch of salt
Directions:

·         1. In a large nonstick skillet, combine the frozen berries, brown sugar, lemon zest, lemon juice, and water    over medium-high heat.

·         2. Sauté the mixture, stirring often, until the berries begin to break down and release their juices. Add the pinch of salt and check for seasoning (add more sugar and lemon juice, if desired). 

3.Remove the pan from the heat and serve immediately with warm pancakes.
